1 1/4 lb. boneless, skinless chicken thighs

1 large red pepper

1 firm-ripe mango

1/2 large Red Onion

6 soaked bamboo skewers

Pre-packaged Curry Yogurt Dip for serving

Versatile Marinade

1/4 c. olive oil

1/4 c. lemon or lime juice or vinegar

2 tsp. minced garlic

1/4 tsp. salt

1/4 tsp. red pepper flakes or ground black pepper

  1. Marinate chicken at least 1 hour or overnight.
  2. Position top rack 3 to 4 in. from heat. Heat broiler. Place pieces of chicken, red pepper, mango and red onion on skewers.
  3. Place on broiler pan; broil for 15 minutes, turning every 5 minutes until chicken and vegetables are cooked through and slightly browned. Serve over rice with Curry Yogurt Dip.
  4. Combine marinade ingredients in large ziptop bag; shake to mix. Remove 2 Tbsp marinade to another ziptop bag to toss with veggies before skewering.
  5. Add 1 lb protein to marinade and seal bag. Refrigerate at least 1 hour or overnight.
